Mutton Dhansaak
Mutton cooked in the
traditional Zoroastrian style.

Inrgedients
For the Dhansaak
dal
Mutton (Skinned & washed)
450 gms.
Tuvar dal (washed & soaked
for 30 min) 1½ cups
Finely chopped onions
1 no.
Finely chopped tomatoes
1 no.
Coriander leaves (finely
chopped) ½ cup
Mint 5 leaves
Pumpkin 3" piece
Potatoes (peeled & quartered)
2 nos.
Turmeric powder 1 tsp.
Salt 2 tsp.
For the Vaghar
Onions finely chopped
1 no.
Ginger/Garlic/Chili paste
2 tsp.
Garlic 4 cloves Hot jalapeno
chilies 2 nos.
Dhansaak masala 2 tsp.
Dhanajeera masala 2 tsp.
Black pepper powder
To taste Oil 2 tsp.
Salt To taste
Method
FOR DAL
1. Put enough water to
cover the dal contents.
2. Put the above in pressure
cooker and cook for 10 minutes. Open cooker and remove meat and
potatoes.
3. Mash the dal with
electric blender or by hand.
4. Put in a large pot
and bring to a simmer.
FOR VAGHAR
1. Fry the onions in
hot oil till brown. Lower heat and add the paste. Fry till aroma
comes out.
2.Add the rest of the
ingredients and fry for a minute on very slow heat. Immediately
add this Vaghar to the simmering dal. Add water if needed. Taste
and add salt/spices to your taste.
3. Add the meat and potatoes
and simmer 5 more minutes.
4. Serve dhansaak with
hot brown rice and kababs.
